Sausage Lentil and Rice Stew

I’m just going to write this recipe out how I actually did it and you can make your own adjustments according to what you have in your fridge and cupboards. 

In a small pot:

2 1/2 cups water
1/2 cup red lentils
1/2 cup French lentils 
Bring to boil and simmer for 20 minutes. Set aside.

In a large pot: 

1 lb. beef Italian sausage (from local farm, pasture fed cows)
Brown and add:
1 diced onion
2 minced garlic

Add to sausage and onions:
(this is the list of stuff I found in my fridge)
1 cup crushed tomatoes
2 tbsp. tomato paste
1 cup cooked cabbage
1/2 small zucchini
1 1/2 cups cooked brown rice
1 cup cooked carrots (plus a handful of oven-fried potatoes thrown in) 

2 bay leaves
1 1/2 tsp. cumin
1/2 tsp. tumeric
1/4 tsp. coriander
1 tsp. paprika
1/4 tsp. cayenne
2 tsp. parsley flakes

Add enough water to just cover, add lentil mixture, bring to boil, and simmer until done. 

Nice served with whole wheat biscuits.
