A Summery Meal

We’ve had this a few times lately and it seems like a nice meal to welcome warmer weather (although now it is snowing).  

Chicken Caesar Salad

Romaine lettuce

Chicken breasts, brush in olive oil and rub or sprinkle with desired spices.

My spice mixture….

2 tsp. salt
1 tsp. garlic powder
1 tsp. basil
1 tsp. oregano
1 tsp. paprika
1/2 tsp. dill
1/2 tsp. sage
1/2 tsp. poultry seasoning
1/2 tsp. black pepper

(this will be enough spice for 10 chicken breasts)

Grill chicken breasts until done.

The salad dressing recipe is from Blueberries and Polar Bears: Webber’s Northern Lodges : Our Most Requested Recipes.

Len’s Caesar Salad Dressing

2 anchovies, minced  (I have always used anchovy paste – “2 squirts”… probably about 2 tbsp. Note: usually found with the DAIRY in the grocery store.  Go figure.)
2 tbsp. lemon juice or juice of 1/2 lemon
2 garlic cloves, crushed
1 tbsp. Dijon mustard
1 egg yolk
1/4 cup vegetable oil or olive oil
1/2 tsp. Worcestershire sauce
3 tbsp. mayonnaise
1/2 tsp. salt
freshly ground pepper to taste

Add croutons and freshly grated parmesan cheese.  Bacon, too, if desired.  Voila!  The croutons on page 72 of the above mentioned cookbook are delicious.   I’m not a big crouton fan, but I do like to eat them when I make some myself!
