Or Victory Pasta Sauce
1/2 red onion, chopped
4 cloves garlic, minced
4 celery stalks, chopped
1 red pepper, chopped
Sauté until onions start to become translucent.
1/2 sweet potato, finely grated
1 medium beet, finely grated
3 carrots, finely grated
Continue to sauté until just tender.
1 can tomato sauce (I think it was 28oz.)
1 can pasta sauce (I used Classico Sundried Tomato/Garlic)
1/2 can crushed tomatoes (because they were open in the fridge)
Bring to boil and simmer until veggies is nice and soft. Serve over pasta.
Then revel in the victory when your very picky-eater eight year old says, “I love it!” Now I just have to figure out how to sneak some covert protein into it. I was thinking of puréed beans or maybe I’ll even try sneaking some tofu in. That would be real victory!
