Actually Crispy Crackers

I’ve made other soda crackers and they haven’t been crispy.  I think the secret is in the fat content. I looked at tons of recipes and then settled on a combination.  

Crispy Soda Crackers

2 cups white flourDSC_0002.jpg

2 cups whole wheat flour

2 tbsp. sugar

1 tsp. baking powder

3/4 cup butter

Milk (about 1 1/2 cups but I didn’t measure)

Mix dry ingredients together.  Cut in butter with a pastry cutter.  Add milk until mixture forms ball.  Divide dough into four balls.  Roll each ball on floured surface to 1/4″ or less thickness.  Transfer to baking sheet.  Sprinkle with salt to taste.  Score dough in the size you would like your crackers to be.  Prick crackers with fork.  Bake at 425° for 10 or more minutes or until golden brown.  Watch closely.  Cool on rack.
