The Requested Bread

This is another recipe from Simply in Season by Mary Beth Lind and Cathleen Hockman-Wert. I highly recommend buying this cookbook. You won’t be disappointed. I just discovered that there is also a Simply in Season Children’s Cookbook! Exciting.

Without any more ado, here is the recipe.

Grilled Bread

1 1/4 cups warm water
1 teaspoon active dry yeast
Combine in a mixing bowl, stirring until dissolved.

1 1/2 cups flour
1 1/2 cups whole wheat flour
2 tablespoons olive oil
1 teaspoon salt

The instructions will not be verbatim due to the baby that is on my lap tearing up a piece of tissue.

Knead for about 10 minutes. Cover with damp cloth and let rise until doubled. (May rise in fridge for 6-8 hours) Divide and let rest a few minutes. Brush with olive oil (and we added crushed garlic and a little salt to that). Roll or press flat to desired thickness. We did the oven ones on “grill” and had the rack about 8 inches from the element. Watch closely! Flip. Watch even more closely! The BBQ ones were done on about med-low heat.
